Did you know safe food preservation information is always being updated and refined? For example, water bath canning apples has typically always been simple and safe because it's assumed the pH of apples is below 4.0...but some species of apples jump up as high as 4.6--making them less acidic. Adding a little lemon juice to your apples when you can them will help ensure that pH level is safe for water bath techniques.
